This recipe is a life saver if you are pressed for time
6ea chicken breast fillets, cut into strips
125ml cake flour
125ml coconut milk
25ml roasted curry powder
250ml plain yoghurt
250g green beans, steamed
125g broccoli florets, steamed
125g button mushrooms, steamed
125g baby corn, steamed
1. Mix the cake flour and turmeric on a plate and roll chicken strips in the mixture
2. Heat the oil in a large frying pan and fry the coated chicken strips in batches until lightly browned and just done.
3. Mix the curry ingredients, add to the pan, add the vegetables and chicken strips, heat through. Serve with rice or lemon-parsley wheat – flavour the cooked wheat with lemon rind, lemon juice and chopped parsley to taste
