Mozzarella – mince meat frikkadel on oven roasted tomatoes

4ea         ripe tomatoes cut in half
Salt and milled pepper
400g     mince meat
1ea         small onion, chopped
5ml ea   fine coriander and cumin
10ml      Worcester sauce
1ea         egg, beaten
20ml      fresh parsley, chopped
100g       Mozzarella cubes

Method:

1. Pre heat the oven to 180°C.   Arrange the tomato halves on a baking tray.   Season with salt and pepper.   Bake 10-15 minutes.
2. Mix the rest of the frikkadel ingredients in a mixing bowl and shape into a ‘patty’. Make a little ‘hole’ in the middle of the patty and place a mozzarella cube in each ‘hole’ – re shape the patty.
3. Remove the tomatoes from the baking tray (keep warm) and use the same baking tray for baking the frikkadels in the oven. Bake until cooked and mozzarella melted.
4. Serve with pasta, pesto and tomato halves. Top each frikkadel with onion marmalade.
